Countdown to Christmas- Sugar Cookie Bars - A Sugar Cookie base topped with creamy frosting!

Sugar Cookie Bars

1 stick butter, room temperature
1 cup sugar
1 egg
1 teaspoon vanilla
2 cups all-purpose flour
1 teaspoon baking powder
1 heaping Tablespoon Christmas sprinkles

FOR THE FROSTING
2 cups powdered sugar
1 stick butter, room temperature
3 ounces cream cheese, room temperature
1 teaspoon vanilla
2 Tablespoons milk
additional Christmas sprinkles

Preheat oven to 350°. Prepare a 9”x 9” baking pan. If using a dark metal pan, line with parchment paper. If using a glass dish, spray with nonstick spray.

Beat together the butter and sugar until fluffy. Add in the egg and vanilla and beat until well combined. Finally, beat in the flour and baking powder to form a thick dough. Add in the sprinkles.

Press the batter into a prepared baking dish. Bake at 350° for 16 to 20 minutes or until just firm and lightly brown around the edges.

Once it has finished baking, take the cookie bar out of the oven and allow it to completely cool.

Make the frosting by creaming together the powdered sugar, butter, cream cheese. Beat in the vanilla and milk. Spread the frosting over the cookie bar and top with additional sprinkles.
